Noiret Chicken
Easy Mediterranean Chicken
4 boneless chicken breasts ( or whole breast and/or leg quarters - more traditional cooks prefer bones in for added flavor )
1 tablespoon Concord grape seed oil
2 cups Mediterranean olives, and/or mushrooms, etc. from the deli bar
1-2 tablespoons freshly minced basil
Coat large skillet with Concord grape seed oil and heat to medium high. Add chicken and sear approximately 2 mins. per side. Keep a splatter screen handy and turn carefully. Reduce heat to medium low and stir in olive mixture, cover and simmer until chicken is cooked through and juices run clear when pricked with a fork. A sprinkling of freshly minced basil over the top finishes the dish.
Serve with pasta or rice and your favorite green salad ... and a bottle of LaCourette's Noiret !
